 L-セリンからのラセミ化反応およびD,L-セリンのデヒドラターゼ反応(α,β-脱離)を触媒する酵素である<ref><pubmed>9892700</pubmed></ref> <ref><pubmed>15536068</pubmed></ref>。ラセミ化反応ではD-セリン、デヒドラターゼ反応によりピルビン酸とアンモニアが産生される。SRは種々の生物に広く存在しており、これまでにカイコ、ラット、マウス、ヒト、シロイヌナズナなどから精製、遺伝子クローニングされている。
